Nutritional analysis

Hereunder are a number of studies on the nutritional value of our products and also tests on cholesterol levels compared to other products. 

These tests were performed by the Dr J. Ferrer Rovira Bromatological Testing Laboratories (Chorizo: 03-09-92, pancetta and ribs: 20-11-98), according to CENAN recommendations (Spanish Ministry of Health’s National Centre for Food and Nutrition). Our products are tested on a monthly basis. They meet official quality standards according to Government Presidency Order of 7th February 1980 and those of the Hygienic-Microbiological Quality Standards of Spain’s Ministry of Health and Consumer Affairs.

Conclusions

  • The cholesterol level is lower than that existing in many other foods (see comparison table)
  • The saturated fatty acid content represents 35% of its total fat and 7.4% of its overall nutrient composition. According to the French CHA (Conseil National de l'Alimentacion), the convenient proportion in saturated fatty acids of a food should not exceed 30% of its total caloric value, with 22% being the value in our chorizos.
  • The rest of the calories provided by the sausage fat (43% of the total) comes from unsaturated fatty acids such as oleic and linoleic, essential for human health.
  • The vegetable fiber content is 4 to 5 grams per 1,000 kcal., Which is somewhat deficient with respect to a given diet of 10 to 15 grams of fiber per 1,000 kcal. We must remember the null fiber content of dairy foods, fish, meat and their preparations unless they specifically add plant components in their composition.
  • The contribution of vitamin A is not degradable (1,300 to 1,400 IU per 100 grams), as well as iron (4.3 milligrams per 100 grams) and natural phosphorus (320 milligrams per 100 grams).
  • It has a population of Lactobacilli exceeding 10,000,000 active colonies per gram of product (in yogurt it is 10,000,000 to 100,000,000 colonies / gram).

The medical recommendation is not to exceed a daily intake of Cholesterol higher than 1500 milligrams, with the recommended normal values between 300 and 500 milligrams per day.
