It’s made with the choicest part of the pork ribs, with a thick layer of meat and marinated in salt, paprika and garlic.
Cured in natural drying sheds and oak smoked, giving it its distinctive texture, aroma and flavour. You can cook it in many ways: fried and preserved in oil, charcoal grilled, in stews with potatoes and pulses, etc.
