1. Fry the cubes or shavings in EVOO. You don’t need a lot of oil as the cubes or shavings will release their own fat.
2. When you see that the cubes or shavings are done, throw in one or two eggs and fry them together with the torreznos, incorporating them into the egg whites.
3. Fry the eggs to your desired level of doneness and season with salt. You can sprinkle some La Vera paprika to garnish.
